For years, I have tried count recipes (with a lot of failures) to find the holy grail of gluten-free pizza crusts. Countless experiments with various ingredients and flours filled my kitchen, in hope of delivering the ultimate combination of taste, texture, and simplicity. After what seemed like an eternity of mixing, kneading, and baking, I finally found the perfect combo that not only met but exceeded all my expectations.

Let me introduce you to my ultimate gluten-free pizza crust — with just four basic ingredients, it has changed my homemade pizza game. No longer do I worry about complicated recipes or obscure ingredients. Made with rice flour, it’s something I always have an hand in my pantry and its a flour I can get no matter what country I’m travelling to or living in.

The journey wasn't easy. I've tested combinations of flours and additives, from almond flour to tapioca starch, in pursuit of that ideal balance. Each trial brought its own lessons, refining my understanding of dough chemistry and the intricacies of gluten-free baking.

But through persistence and determination, I found a winning formula. This crust is not only gluten-free but also remarkably easy to prepare. Its minimal ingredient list belies its deliciously complex flavor and satisfyingly crisp texture. It's a testament to the notion that sometimes, less truly is more.

4-INGREDIENT GF PIZZA CRUST

Makes: 2 large pizzas
Prep time: 20 mins
Cook time: 35-40 mins

INGREDIENTS

  •  3 cups rice flour
  •  1.5 cups water
  • 1 tsp salt
  •  1 tsp active yeast

INSTRUCTIONS:
1. Preheat your oven to 450°F (230°C).
2. Mix the rice flour, water, salt, and yeast in a stand mixer for 5 minutes until well combined. Alternatively, mix thoroughly in a bowl.
3. Prepare a baking sheet with parchment paper.
4. Shape the dough into 2 balls using your hands.
5. Spread the dough onto the parchment-lined pans to form a pizza shape. Use wet hands if the dough is sticky to work with.
6. Top with pizza sauce, cheese, and your favourite toppings.
7. Bake in the preheated oven for 15 minutes.
8. Open the oven and brush the crust with olive oil.
9. Continue baking for another 15-20 minutes or until golden brown.
10. Remove from the oven, let it cool briefly, then serve!
