Garlic Herb Ricotta Meatballs [GF]

A perfect dish for both meal prep or a comforting dinner. Bursting with flavors of basil, parsley, and oregano, these tender meatballs are elevated with a creamy ricotta cheese blend. Whether enjoyed on a bed of pasta for a hearty meal or served alongside a refreshing salad for a lighter option, this recipe offers versatility to suit any occasion. Prepare a batch ahead of time for easy weekday dinners or savor the simplicity of a freshly cooked meal bursting with Italian-inspired goodness!

I like to cook the meatballs in the oven but you can also cook them until brown on the stove top if you prefer. Baking them in the oven can be convenient since you can cook a large batch all at once, and it's generally hands-off once they're in the oven. On the other hand, cooking them on the stovetop can give you more control over the browning process and may be quicker if you're making a smaller batch. It really comes down to personal preference and what works best for your recipe and kitchen setup.

Garlic Herb Ricotta Meatballs

Cook Time: 40 mins

GARLIC HERB RICOTTA INGREDIENTS:

  • 2 cups ricotta cheese
  • 1 tsp each of basil, parsley, and oregano
  • 2 cloves garlic, minced

MEALBALL INGREDIENTS:

  • 1 yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup almond flour (or gluten-free breadcrumbs)
  • 1 tsp Italian seasoning
  • 1 tsp mustard powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 lb ground beef

OTHER INGREDIENTS:

  • 1 tbsp olive oil
  • 1 jar marinara sauce

INSTRUCTIONS:

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix together the ingredients for the Garlic Herb Ricotta and set aside.

  3. In another bowl, combine all the meatball ingredients + add 3/4 cup of the ricotta mixture. Mix well.

  4. Lightly grease a baking sheet and roll the meatball mixture into 1.5-inch balls.

  5. Bake the meatballs for 20 minutes in the preheated oven until they are browned.

  6. Heat a skillet on the stove top with 1 tsp of olive oil. Add in the marinara sauce and cooked meatballs. Let simmer for 20 mins.

  7. During the final 10 minutes, dollop the rest of the ricotta mixture on top of the meatballs and allow it to heat through.

  8. Garnish with fresh basil and serve.
